Veal for Lunch

Ingredients

Directions

  1. Butter a good-sized bowl and line it with thin slices of hard-boiled eggs.

  2. Layer thin slices of veal in the bowl, seasoning with pepper and coarse sea salt.

  3. Add a layer of ham, omitting the salt.

  4. Continue alternating layers of veal and ham until the bowl is filled.

  5. Make a stiff paste of flour and water, then cover the contents of the bowl with it.

  6. Tie a double cotton cloth over the paste.

  7. Place the bowl in a saucepan with water up to the rim and boil for three hours.

  8. Remove from heat, take off the cloth and paste, and let it stand until the next day.

  9. Turn it out and serve in very thin slices.
