What each ingredient does

Lobster coral and spawn
Provides the rich, distinctive lobster flavour and colour of the sauce.
Sweet butter
Forms the body of the sauce and carries fat-soluble flavour.
Water or vinegar
Thins the melted butter into a pourable base; vinegar adds a touch of acidity.
Made mustard
Adds sharpness that balances the richness of the butter.

The step that matters

Stir until smooth. If the butter is too hot or the coral mixture is added too quickly, the emulsion can split and the sauce turns greasy. Adding the coral mixture gradually while stirring helps the butter and liquid stay combined.

Swap the mustard

How well each one fits the dish's main ingredients (lobster, butter, vinegar, pepper, meat):

  1. Mustardthe original
  2. Capsicumfits about as well
