Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. In a bowl, combine wheat flour, molasses, yeast, salt, and warm water.

  2. Stir in enough Graham flour to make a stiff dough.

  3. Mix the dough at night and let it rise overnight.

Shape and bake

  1. In the morning, add the dissolved baking soda and mix well.

  2. Pour the dough into two medium-sized greased pans, filling them halfway.

  3. Let the dough rise in a warm place until it reaches the top of the pans.

  4. Preheat the oven to 400°F (200°C) and bake for one hour.

  5. Cover the pans with thick brown paper or a tin cover for the first 20 minutes to prevent hardening.

What each ingredient does

Yeast
Ferments the dough so it rises and becomes light and airy.
Molasses
Adds sweetness, moisture and a dark color to the crumb and crust.
Graham flour
Builds the stiff dough structure and gives the loaf its hearty, nutty texture.
Baking soda
Reacts with the acidity in the dough to add extra lift and tenderness.

The step that matters

Covering the pans for the first 20 minutes. Covering the loaves with brown paper or a tin lid traps moisture and slows surface drying, so the crust does not harden before the crumb is set.
