Why it works: Wheat and milk are a kitchen classic. They rank in the top 6% of all ingredient pairs, and cooks put them together in 2,418 recipes. Both carry (e,z)-2,6-nonadienal, which smells cucumber, melon. The science ↓

Directions
The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare the wheat bread dough as usual.
Divide the dough into three pieces, each the size of a pint bowl.
Dust a surface with flour and roll each piece into a 12-inch long rope, tapering the ends.
Place one rope on a baking tin and attach the ends of the other two ropes to it, braiding them together.
Press the ends together to seal.
Brush the top of the loaf with milk.
Let it rest for 10 minutes, then bake in a preheated oven at 400°F (200°C) for nearly an hour.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
