Ingredients

Directions

Make the icing

  1. Combine the sugar and starch, then sift through gauze.

  2. Beat the egg whites until frothy, ensuring to beat in one direction.

  3. Gradually add the powdered sugar to the egg whites to maintain the froth.

  4. Continue whipping for 30 minutes, adding more sugar if the icing is too thin.

Finish and decorate

  1. Set aside a small amount of icing for decoration.

  2. Spread the icing smoothly over the cake with a knife once it comes out of the oven.

  3. Dry the icing in a cool oven.

  4. To color the icing, mix the coloring with a little colorless spirit, then stir into the icing until the desired tint is achieved.

  5. Use a cone made of stiff paper to pipe the colored icing for decoration.

What each ingredient does

Extra refined sugar
Forms the sweet bulk of the icing and sets firm as it dries.
Fine white starch
Adds body and softness, helping the icing spread smoothly and dry without cracking.
Egg whites
Whipped into a foam that gives the icing its light, airy structure.

The step that matters

Continue whipping for 30 minutes. Egg white foam is fragile and can collapse if overbeaten or underbeaten. Adding sugar gradually and whipping steadily keeps the froth stable, while adding too much sugar makes the icing too thin to hold its shape.

Swap the saffron

The recipe marks saffron as optional. How well each one fits the dish's main ingredients (sugar, egg, spirit):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Gingerfits better
  4. Saffronthe original

Fit is the average pairing score against sugar, egg, spirit. Candidates are from the same food group and used in at least 100 recipes.
