Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the berries

  1. Wash the huckleberries in a basin of water and remove any floating debris.

  2. Pick out the stems and unripe berries, then place the cleaned berries in a dish.

Assemble the pie

  1. Line a buttered pie dish with pie crust and fill it with the huckleberries, about ½ inch deep.

  2. Sprinkle the brown sugar, flour, coarse sea salt, and grated nutmeg over the berries.

  3. Cover the pie with another crust, cut a slit in the center or make several small incisions on the sides.

  4. Press the edges of the crusts together, trim the excess, and bake in a 400°F (200°C) oven for 45 minutes.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Huckleberries
Provide the main fruit filling, supplying flavor and most of the juice that thickens into the pie's sauce.
Brown sugar
Adds sweetness and molasses-like depth, and helps draw juice from the berries.
Flour
Thickens the juices released by the berries so the filling sets rather than running out.
Pie crust
Forms the structure that holds the filling and browns in the oven.

The step that matters

Cutting vents in the top crust. Steam from the bubbling berries must escape through the vents; without them pressure can build, lifting the crust or forcing juices out the edges.

Swap the nutmeg

How well each one fits the dish's main ingredients (sugar, flour):

  1. Jalapenofits better
  2. Cinnamonfits better
  3. Nutmegthe original
  4. Turmericfits about as well

Fit is the average pairing score against sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
