Why it works: Milk and vanilla are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 19,187 recipes. Both carry ethyl caproate, which smells fruity, apple peel. The science ↓

Tapioca Pudding

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the base

  1. Wash the tapioca and let it simmer gently in the milk for 15 minutes, stirring occasionally.

  2. Allow the mixture to cool.

Bake

  1. Mix in the butter, sugar, and well-beaten eggs, then add the flavoring.

  2. Butter a baking dish, pour in the pudding mixture, and bake at 350°F (175°C) for 1 hour.

  3. If boiling, add more tapioca and cook in a buttered basin for 1.5 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as its starch swells and gelatinizes during simmering, giving the pudding body.
Eggs
Set during baking to bind the pudding and give it a custard-like richness.
Milk
Forms the liquid base that the tapioca swells in and the eggs set into.
Butter
Adds fat for a smoother mouthfeel and richer flavor.
Sugar
Sweetens the pudding and adds to its tender texture.

The step that matters

Simmering the tapioca in the milk. Tapioca must simmer long enough for its starch granules to swell and soften fully; undercooked tapioca stays firm and gritty, and the pudding will not thicken properly.
