Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Powdered ginger root
Supplies the main spicy flavor and aroma of the drink.
Cream of tartar
Adds acidity that brightens the flavor and helps keep the sugar from crystallizing.
Loaf sugar
Provides sweetness and the food that the yeast ferments into carbonation and alcohol.
Best yeast
Ferments the sugars, producing carbon dioxide for fizz and flavor compounds.
Lemons
Add citrusy acidity and aroma that balance the sweetness.

The step that matters

Cool before adding the yeast. Yeast is killed by very hot liquid, so the mixture must cool nearly to room temperature before the yeast is stirred in. Adding it too early can stop fermentation entirely.

Swap the lemon

How well each one fits the dish's main ingredients (ginger, cream, sugar):

  1. Vanillafits better
  2. Coconutfits about as well
  3. Lemonthe original
  4. Orangefits about as well

Fit is the average pairing score against ginger, cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
