What each ingredient does

Milk
Forms the creamy base of the soup and mellows the tomato acidity.
Baking soda
Neutralizes tomato acid so the hot milk is less likely to curdle.
Tomatoes
Provide the main body, sweet-sour flavor and liquid of the soup.
Butter
Adds fat for a smoother, richer mouthfeel.

The step that matters

Adding the tomato mixture to the milk. Tomato is acidic and hot milk contains proteins that can clump or curdle when they meet acid. Keeping the milk hot, with baking soda already stirred in to reduce acidity, and adding the tomatoes gradually and steadily helps keep the soup smooth.

Swap the onion

How well each one fits the dish's main ingredients (tomato, pepper, butter, milk):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits about as well

Fit is the average pairing score against tomato, pepper, butter, milk. Candidates are from the same food group and used in at least 100 recipes.
