Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Fish Dressing

Oven, in the book's wordsA brisk oven

Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Combine the crumbled bread, pepper, coarse sea salt, and parsley in a bowl.

  3. Moisten the mixture with melted butter.

  4. Fill the cleaned fish with the dressing.

  5. Sew the fish closed with a coarse needle and thread.

  6. Bake for 30 minutes, basting occasionally with butter and water.

  7. Ensure the fish is washed, scraped, and dried inside and out, and lightly sprinkled with salt before filling.
