Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Heat the milk in a double boiler.

  2. Once hot, mix in the butter and flour until combined.

  3. Add the beaten egg yolks and then fold in the beaten egg whites.

Bake and serve

  1. Pour the mixture into a pudding dish and place it in a pan of water.

  2. Bake at 350°F (175°C) for about 20 minutes.

  3. Serve immediately with cream or sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air for lift, while the yolks set the pudding into a tender structure.
Flour
Starch thickens the hot milk and gives the pudding its body.
Milk
Forms the liquid base that the flour thickens and the eggs set.
Butter
Adds richness and fat, softening the texture.
Sugar
Adds sweetness and balances the flavor of the eggs and milk.

The step that matters

Folding in the egg whites. Whites hold air that makes the pudding rise. Folding gently keeps that air in, while stirring vigorously would deflate the batter and leave a dense result.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
