Strawberry Short Cake

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, combine flour, baking powder, sugar, and salt.

  3. Add softened butter and mix lightly with your fingertips.

  4. Add ice water as needed to form a dough.

  5. Divide the dough into two parts and flatten with your hands. Do not roll the dough.

Bake and assemble

  1. Butter the top of one layer and place it in the oven immediately. Bake until light brown.

  2. Once baked, lift the layers apart and butter again.

  3. In a deep dish, mash the strawberries and add sugar to taste.

  4. When the cakes are split and buttered, add the mashed berries and cover with the other layer.

  5. Top with whole strawberries and sprinkle with powdered sugar.

  6. Serve the cake warm.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Forms the structure of the shortcake layers as it sets in the oven.
Butter
Adds fat that makes the layers tender and flaky, and browns the top.
Baking powder
Releases gas in the oven so the layers rise and stay light.
Strawberries
Add moisture, fruity sweetness and acidity that balance the rich shortcake.

The step that matters

Do not roll the dough; flatten it by hand. Rolling works the dough and develops gluten, which makes shortcake tough. Gently flattening keeps the layers tender and crumbly.
