Strawberries Preserved in the Sun
Ingredients
Directions
Prepare the syrup
Select fine, large strawberries.
Make a rich syrup by dissolving the sugar in water.
Drop the strawberries into the syrup and bring to a boil.
Pour the mixture into large, deep platters.
Dry in the sun
Cover the platters with large pieces of window glass and place them outdoors in the hot sun.
Turn the berries with a silver fork three times a day.
After three days of bright sun, let the mixture cool overnight.
Transfer the strawberries to jars for storage.

What each ingredient does
- Strawberries
- Provide the fruit that is concentrated and preserved as it dries and gains a chewy texture.
- Sugar
- Sweetens the fruit and, with the syrup, draws out water and helps preserve the berries.
The step that matters
Boiling the strawberries in the syrup. Bringing the berries to a boil in the syrup helps the sugar penetrate the fruit. Too little soaking or boiling leaves the berries prone to spoiling during the long sun-drying period.
