Why it works: Lemon and nutmeg match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 11,318 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Milk Punch

Ingredients

Directions

Prepare

  1. Cut thin slices of the yellow part of the rinds of the 24 lemons.

  2. Infuse the lemon peels and grated nutmegs in 1 quart of rum for 24 hours in a warm place.

Make the punch

  1. After 24 hours, add the juice of the 24 lemons (seeds removed), water, sugar, and the infused rum to a large vessel.

  2. Stir until the sugar dissolves, then add the boiling milk while stirring continuously.

  3. The mixture will curdle; cover and let it stand for 1 hour.

  4. Filter through a bag until clear, which may take 3 to 4 hours.

Bottle and store

  1. Bottle the punch, cork well, and store upright. It can be consumed immediately but improves with age.

What each ingredient does

Jamaica rum
Provides the spirit base and carries the lemon and nutmeg aroma.
Boiling milk
Curdles with the acidic lemon juice, and the solids are later filtered out, clarifying the punch.
Loaf sugar
Adds sweetness that balances the sharpness of the lemon juice.
Lemons
Supply acidity and fragrant oils from the peel, balancing the sweetness.
Nutmegs
Contribute warm aromatic flavour when infused into the rum.

The step that matters

Adding the boiling milk. Milk must be poured in slowly while stirring into the acidic lemon mixture so it curdles evenly. The curds carry impurities and cloudiness that settle out, so the later filtering can produce a clear punch.

Swap the lemon

How well each one fits the dish's main ingredients (rum, milk, sugar, nutmeg):
