Serve

  1. Remove the mushrooms with a skimmer and arrange on a platter around the mutton.

  2. Boil the sauce down to the proper consistency and pour over the mushrooms before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Main ingredient; browning in fat gives them savoury flavour and a golden surface.
Flour
Light dusting helps the mushroom surface brown and lightly thickens the sauce.
Butter or oil
Fat for browning the mushrooms and carrying flavour into the pan.
Stock
Liquid that becomes the sauce, carrying savoury flavour from the pan.

The step that matters

Browning the mushrooms. Mushrooms release a lot of water as they cook. Letting them brown in hot fat before adding stock lets that moisture evaporate, which gives concentrated flavour and colour instead of a grey, soft result.
