Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Shin of beef
Releases gelatin and savory flavour into the broth as it simmers for hours.
Onion
Browning adds sweetness and deep aroma to the finished stock.
Carrot
Adds natural sweetness and body to the stock's flavour.

The step that matters

Skimming the foam while simmering. Foam contains coagulated proteins and impurities that can make the stock cloudy and give it a bitter, muddy taste if left in. Skim it off regularly as it rises.
