What each ingredient does

Beef from the round
Gives the stock its meaty flavor and body as it simmers down.
Bones
Release gelatin and savory flavor into the broth, adding body.
Macaroni or vermicelli
Supplies the starchy pasta pieces that make the soup filling.
Celery root
Adds earthy, savory aroma to the stock.

The step that matters

Boil down to 2 quarts, then remove the fat and clarify the broth. Simmering concentrates flavor and gelatin, but a hard boil can cloud the broth. Skimming fat and clarifying keeps the soup clear and clean-tasting.

Swap the clove

How well each one fits the dish's main ingredients (beef, celery):

  1. Tarragonfits better
