What each ingredient does

Mutton
Provides the main meat flavour, and collagen from the neck and bones gives the broth body.
Barley
Its starch thickens the broth as it cooks and softens the grains.
Butter
Fat for frying the vegetables, carrying flavour and adding richness to the broth.
Carrot
Adds gentle sweetness and body as it softens during the long simmer.

The step that matters

Cook slowly for 4 hours. A gentle simmer lets collagen from the neck and bones break down into gelatin, which gives body to the broth and tenderness to the meat. A hard boil emulsifies fat into the liquid, making the broth cloudy and greasy, and can toughen the meat.

Swap the white pepper

How well each one fits the dish's main ingredients (mutton, celery, carrot, turnip, onion, barley, butter):

  1. Parsleyfits better
  2. Thymefits better
  3. Capersfits better
