Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Round steak
Provides the main meat, which is ground or finely chopped to form the cakes.
Egg
Binds the chopped meat so the cakes hold their shape while cooking.
Flour
Dredging flour browns the cake surfaces, and flour cooked in the fat thickens the sauce.

The step that matters

Browning the cakes on both sides. Searing in hot fat creates browned flavor through the Maillard reaction and a crust that helps the cakes hold together. Cakes placed in fat that is not hot enough will steam and may break apart.

Swap the onion

How well each one fits the dish's main ingredients (pepper, egg, flour, butter, mushroom):

  1. Shallotfits better
  2. Spinachfits better
  3. Chivefits better
  4. Onionthe original

Fit is the average pairing score against pepper, egg, flour, butter, mushroom. Candidates are from the same food group and used in at least 100 recipes.
