Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the stuffing

  1. To make the stuffing, combine stale bread crumbs, melted butter, salt, pepper, marjoram, sage, and onion juice in a bowl.

  2. Add hot water to the stuffing if it is not moist enough.

Stuff and roast

  1. Preheat the oven to 400°F (200°C).

  2. Sprinkle the inside of the leg of mutton with coarse sea salt and pepper.

  3. Stuff the leg with the stuffing mixture and sew it closed.

  4. Roast the stuffed leg of mutton in the oven until cooked through.

What each ingredient does

Leg of mutton
Forms the main meat that is roasted and carries the stuffing.
Stale bread crumbs
Absorb the melted butter and juices to form a moist, bound stuffing.
Melted butter
Adds fat and richness, coating the crumbs and keeping the stuffing moist.
Marjoram
Contributes a savory, herbal aroma to the stuffing.
Sage
Contributes a savory, earthy aroma that complements the mutton.

The step that matters

Adding hot water to the stuffing. Dry bread crumbs cannot soften or bind without moisture, so the stuffing needs enough liquid to be moist before it goes into the meat. Too little leaves it crumbly; too much makes it soggy and slows the bake.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (mutton, pepper, bread, butter, marjoram, sage):

  1. Carrotfits better
  2. Shallotfits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against mutton, pepper, bread, butter, marjoram, sage. Candidates are from the same food group and used in at least 100 recipes.
