What each ingredient does

Chicken
Provides the main protein, which becomes tender during the long simmer in the sauce.
Flour
Coats the chicken to promote browning and thickens the sauce when browned with the curry mixture.
Butter
Carries the heat for browning the chicken and onion and adds richness to the dish.
Onion
Softens and sweetens as it cooks, forming the base flavor of the sauce.
Curry powder
Supplies the spiced aroma that defines the flavor of the dish.
Strained tomatoes
Adds acidity and body to the sauce, balancing the sweetness and richness.

The step that matters

Browning the flour and curry powder. Browning the flour with the curry powder in fat toasts the spices and cooks out raw flour taste, and it must be stirred so it does not scorch. Adding liquid too fast without stirring can leave lumps.
