Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Remove the tendons and bone from the drumsticks.

  2. Stuff the leg with force meat and sew the skin securely to maintain shape.

Poach and cool

  1. Place the legs in a baking pan.

  2. Cover with boiling water.

  3. Simmer in the oven at 350°F (175°C) for about 1 hour and 15 minutes until tender.

  4. Remove the legs from the water.

  5. Let them cool.

  6. Take out the stitches.

Coat and fry

  1. Roll the legs in beaten egg.

  2. Roll the legs in seasoned bread crumbs.

  3. Roll the legs in beaten egg again.

  4. Fry the legs in deep oil for 1 minute until golden brown.

  5. Serve with your choice of sauce.

What each ingredient does

Chicken or turkey legs
Provide the meat that is boned, stuffed, and cooked until tender.
Force meat
Fills the boned leg, adding moisture and rich flavour during the simmer.
Egg
Acts as a binder so the bread crumbs adhere evenly to the legs.
Seasoned fine bread crumbs
Form a crisp, golden coating when the legs are fried.

The step that matters

Simmer until tender before coating. The legs must be fully cooked through during the gentle simmer, because the brief deep frying only browns the coating and will not finish cooking the meat.
