Why it works: Lettuce and watercress match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 307 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Egg Salad

Ingredients

Directions

Prepare the eggs

  1. Cook the eggs in water just off the boil for 20 minutes, then chill and shell them.

  2. Cut the egg whites into strings and pass the yolks through a potato ricer.

Assemble

  1. Arrange the whites on shredded lettuce, making little nests and filling them with the yolks.

  2. Pour French dressing lightly over the nests.

  3. For variation, mix yolks with chopped olives and mayonnaise, fill the whites, and shape them to resemble whole yolks.

  4. Serve in nests of lettuce or watercress, sprinkled with chives and drizzled with French dressing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites provide the structure for the nests, while the riced yolks give a rich, creamy filling.
French dressing
Adds moisture and acidity that lightly flavours the nests and balances the rich yolks.
Mayonnaise dressing
In the variation, adds fat and moisture so the riced yolk filling holds its shape and stays creamy.

The step that matters

Cooking the eggs. Simmering just off the boil for 20 minutes sets the yolks fully without overcooking them, which would leave a grey ring and a dry, crumbly texture that is harder to rice smoothly.

Flavor stand-ins for the lettuce

How well each one fits the dish's main ingredients (egg, olive, watercress, chive):

  1. Welsh onionbetter flavor fit
  2. Shallotbetter flavor fit
  3. Lettucethe original
  4. Spinachabout as good a flavor fit

Fit is the average pairing score against egg, olive, watercress, chive. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
