Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sour apples
Provide the bulk and tart flavour that balances the sugar.
Sugar
Adds sweetness and helps thicken the chutney as it cooks down.
Cider vinegar
Adds acidity that gives the chutney its sharp tang and helps preserve it.
Currant jelly
Adds pectin and fruity sweetness that help the chutney set.
Raisins
Add concentrated sweetness and chewy texture as they soften in the cooking.
Lemons
Add acidity and brightness that lift the flavour of the fruit.

The step that matters

Stirring during the final hour. Once sugar is added the mixture thickens and can scorch on the bottom of the pot. Stirring almost constantly spreads the heat evenly and prevents burnt flavour.
