Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fine granulated sugar
Provides sweetness and, as it cooks and recrystallizes, the fudge's firm, fine-grained body.
Chocolate or cocoa
Supplies the chocolate flavour and deep colour of the fudge.
Cream
Adds fat and moisture, giving the fudge a smoother, softer texture.
Butter
Contributes richness and fat, helping the fudge stay tender and glossy.

The step that matters

Cook to the soft-ball stage without boiling dry or stirring too early. Sugar syrup must reach the right concentration to set properly. Stirring the mixture while cooling or cooking too far can make it grainy or hard, while stopping too early leaves it runny.

Swap the nuts

The recipe marks nuts as optional. How well each one fits the dish's main ingredients (sugar, chocolate, cream, butter):

  1. Almondfits better
  2. Filbertfits better
  3. Hazelnutfits better
  4. Nutsthe original

Fit is the average pairing score against sugar, chocolate, cream, butter. Candidates are from the same food group and used in at least 100 recipes.
