To Bake Fish

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Place 2-3 slices of salt pork in the bottom of a pan to prevent sticking.

  3. Wash and dry the fish if using a part of it.

  4. Cover the fish with buttered cracker crumbs seasoned with salt, pepper, lemon juice, chopped parsley, and onion juice.

  5. Alternatively, sprinkle with flour, salt, pepper, and small pieces of butter.

  6. Five minutes before removing from the oven, cover the top with grated cheese seasoned with a little salt and paprika.
