Stuffed Chicken or Turkey Legs

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Remove the tendons and bone from the drumsticks.

  2. Stuff the leg with force meat.

  3. Draw the skin over the ends and sew securely to maintain shape.

Cook

  1. Place in a baking pan, cover with boiling water, and simmer at 350°F (175°C) for about 1 hour and 15 minutes.

  2. Remove from water and let cool, then take out the stitches.

Coat and serve

  1. Roll in beaten egg, then in seasoned bread crumbs, and again in egg.

  2. Fry in deep fat for 1 minute.

  3. Serve with olive, tartare, celery, or currant jelly sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Force meat
Fills the leg, giving the cooked meat a moist, firm, sliceable centre.
Beaten egg
Binds the bread crumbs to the leg so the coating stays on during frying.
Seasoned fine bread crumbs
Forms a crisp, golden outer crust when fried.

The step that matters

Frying the coated legs. The coating must be fully set and the fat hot enough to brown quickly; otherwise the crumbs can absorb grease and fall away, and the cooked interior gets no crisp crust.
