What each ingredient does

Squabs
Provide the main meat, which becomes tender during the long covered braise in the casserole.
Flour
Coats the squabs for browning and thickens the sauce for body.
Chicken or veal broth
Supplies the liquid that cooks the squabs and forms the base of the sauce.
Cream
Adds richness and a smooth, silky texture to the sauce.
Mushrooms
Add earthy flavour and savoury depth, and soften during cooking.

The step that matters

Browning the squabs in hot fat. Browning creates colour and roasted flavour through the Maillard reaction. Crowding the pan or using fat that is not hot enough causes steaming instead, leaving the meat pale and flat in taste.
