Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Form the bulk of the filling and set firm when cooked, giving the croquettes body.
Heavy white sauce
Binds the chopped egg into a moist mixture that holds its shape when shaped.
Breadcrumbs
Form a crisp outer coating that browns when fried.

The step that matters

Cook the eggs in water just off the boil for 30 minutes. Water that is kept just below boiling cooks the eggs gently, so the yolks set fully without turning grey or rubbery. Letting the eggs cool fully before peeling and chopping keeps the filling firm enough to shape.

Swap the parsley

How well each one fits the dish's main ingredients (egg, pepper, mushroom, sauce):

  1. Parsleythe original
  2. Tarragonfits about as well
  3. Thymefits about as well
  4. Capersfits less well

Fit is the average pairing score against egg, pepper, mushroom, sauce. Candidates are from the same food group and used in at least 100 recipes.
