Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the base

  1. Preheat the oven to 400°F (200°C).

  2. Melt the butter in a saucepan.

  3. Stir in the flour, salt, pepper, and onion juice.

  4. Gradually add the milk or chicken stock, stirring until smooth.

Combine and bake

  1. Mix in the bread crumbs, then add the beaten egg yolks and chopped chicken.

  2. Fold in the stiffly beaten egg whites.

  3. If desired, add the chopped mushrooms.

  4. Pour the mixture into a baking dish set in a pan of hot water.

  5. Bake until firm.

What each ingredient does

Eggs
Egg whites trapped by folding give the soufflé its light, risen structure, and yolks enrich it.
Flour
Thickens the butter and milk into a smooth sauce that holds the soufflé together.
Butter
Fat that is melted with flour to form the roux base, adding richness and flavour.
Milk
Liquid that, with the flour, forms the thick white sauce base and adds moisture.
Chicken
Main filling that gives the soufflé its savoury body and substance.

The step that matters

Fold in the stiffly beaten egg whites. Whites hold air only when whipped stiff and folded gently; overmixing knocks out the air, so the soufflé rises less and turns dense.

Swap the onion

How well each one fits the dish's main ingredients (butter, flour, milk, chicken, bread, pepper, egg):

  1. Capsicumfits better
  2. Potatofits better
