Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the rice base

  1. Cook the rice in boiling water with salt until tender.

  2. Drain the cooked rice.

  3. Combine the rice, milk, and cream in a double boiler.

  4. Cook the mixture for 20 minutes.

  5. Beat the egg yolks with powdered sugar.

  6. Mix the beaten yolks into the rice mixture.

  7. Remove the mixture from heat and let it cool.

  8. Stir in orange peel and juice.

Bake and serve

  1. Fold in the stiffly beaten egg whites gently.

  2. Pour the mixture into a well-buttered pudding dish.

  3. Bake at 350°F (175°C) for 40 minutes.

  4. Serve immediately with a light, delicate sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites beaten stiff trap air, lifting the souffle as it bakes; yolks enrich the custard.
Rice
Starch thickens the milk and cream base, giving the souffle body and a soft, creamy texture.
Milk
Provides liquid and milk proteins that set gently with the eggs during baking.
Cream
Adds fat for a richer, smoother texture and a tender crumb.
Powdered sugar
Sweetens the base and dissolves easily into the beaten yolks.

The step that matters

Folding in the egg whites. Whites must be stiffly beaten and folded in gently. Deflating the foam removes the trapped air that makes the souffle rise, so it bakes flat and dense.

Swap the orange

How well each one fits the dish's main ingredients (rice, milk, cream, egg, sugar, butter):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits better
  4. Orangethe original

Fit is the average pairing score against rice, milk, cream, egg, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
