Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Cream the butter and sugar together until light and fluffy.

  2. Add half of the flour, then mix in the blanched almonds and citron.

  3. Gradually fold in the remaining flour.

  4. Gently fold in the egg whites until just combined.

Bake

  1. Pour the batter into two large loaf pans.

  2. Bake at 350°F (175°C) for one hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air, giving a tender, rich crumb and flavor.
Sugar
Creamed with butter for a light texture and adds sweetness and gentle browning.
Flour
Provides the structure that holds the cake together as it bakes.
Egg whites
Folded in to add lift and structure, keeping the crumb light.
Blanched almonds
Add texture, richness and a nutty flavor throughout the cake.

The step that matters

Folding in the egg whites. Egg whites hold air that gives the cake its lift. Overmixing deflates them and makes the crumb dense, so fold gently and stop once just combined.
