Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Walnuts
Provide the main body of the pickle, absorbing the spiced vinegar and softening as they cure.
Vinegar
Acts as the pickling liquid, preserving the walnuts and giving them their sharp, tangy flavour.
Ginger root
Adds warm, sharp aroma that flavours the pickling liquid.
Whole cloves
Contribute strong aromatic spice that infuses into the vinegar and walnuts.

The step that matters

Spread the walnuts in the air until they become black. The walnuts must darken fully through exposure to air, which is a browning reaction of the exposed surface oxidizing. Stopping early leaves a pale, unevenly coloured pickle.

Swap the mace

How well each one fits the dish's main ingredients (vinegar, ginger, allspice, clove, walnut):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Cardamomfits better
  4. Macethe original

Fit is the average pairing score against vinegar, ginger, allspice, clove, walnut. Candidates are from the same food group and used in at least 100 recipes.
