Why it works: Allspice and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 7,874 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Spiced Beef

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Brine

  1. In a large crock, combine the salt, saltpetre, brown sugar, allspice, cloves, mace, pickled onions, juniper berries, and pepper.

  2. Add the beef to the mixture, ensuring it is fully submerged. Cover and refrigerate for 5 to 6 days.

  3. After brining, draw off the liquid and add a little hot water.

Cook and serve

  1. Cover the crock and place it in a 300°F (150°C) oven. Cook for 5 to 6 hours.

  2. Serve cold, keeping the beef submerged in the pickle with a clean stone on top.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bottom round beef
Is the main cut that is cured and then slowly cooked until tender.
Coarse sea salt
Draws moisture out of the beef and seasons it during the brining period.
Saltpetre
Helps the beef keep its red colour during curing.
Brown sugar
Adds sweetness that balances the salt in the cure.
Juniper berries
Add a resinous, aromatic flavour to the pickle.

The step that matters

Keeping the beef submerged while it cooks and rests. Any part of the beef left above the liquid can dry out and spoil, so the beef must stay covered in the pickle at all times.

Swap the mace

How well each one fits the dish's main ingredients (beef, sugar, allspice, clove, onion, pepper):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Gingerfits better
  4. Macethe original

Fit is the average pairing score against beef, sugar, allspice, clove, onion, pepper. Candidates are from the same food group and used in at least 100 recipes.
