Fish Chowder

Ingredients

Directions

The book gives no oven temperature. The 350°F in the steps was added when the recipe was transcribed, as a starting point.

  1. Place the sliced pork in a dish with a drainer.

  2. Put the dish in the bottom of the oven and render the fat.

  3. Combine the rendered pork with fish, milk, potatoes, crackers, and onions.

  4. Simmer slowly at moderate heat (350°F / 175°C).

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
