What each ingredient does

Vegetable marrow
Forms the main body of the soup and, once softened and strained, gives it its smooth texture.
Butter
Adds richness and carries flavour when the marrow first cooks in the pan.
Milk
Adds creaminess and softens the soup's flavour once stirred in hot.

The step that matters

Stewing until soft enough to strain. The marrow must be cooked fully soft so it passes smoothly through a fine colander. Undercooked pieces stay fibrous and leave a grainy, uneven texture in the finished soup.

Swap the nutmeg

How well each one fits the dish's main ingredients (butter, pepper, sugar, milk, cream, bread):

  1. Nutmegthe original
  2. Cinnamonfits about as well
  3. Celeryfits less well
  4. Parsleyfits less well

Fit is the average pairing score against butter, pepper, sugar, milk, cream, bread. Candidates are from the same food group and used in at least 100 recipes.
