Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wash and dry the smelts with a cloth.

  2. Arrange them in a buttered flat baking dish.

  3. Sprinkle the fish with coarse sea salt and white pepper.

Bake and serve

  1. Cover the fish with a layer of fine fresh bread crumbs.

  2. Place bits of butter over the bread crumbs.

  3. Bake at 400°F (200°C) for 20 to 30 minutes until golden brown.

  4. Squeeze lemon juice over the fish just before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Smelts
The main fish, cooked whole so its delicate flesh stays moist in the oven.
Butter
Adds richness and helps the bread crumbs brown as they bake.
Fine fresh bread crumbs
Form a crisp, golden crust that shields the fish from drying out.
Lemon juice
Adds acidity that brightens the rich butter and mild fish.

The step that matters

Baking until golden brown. Smelts are small and thin, so they cook quickly and can dry out. Baking only until the crumbs are golden keeps the flesh moist while the crust sets and browns.
