Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Escalloped Terrapin

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the sauce

  1. Melt the butter in a saucepan.

  2. Stir in the flour and pour in the hot water, stirring rapidly to make a smooth gravy.

  3. Pound the terrapin to a paste and add to the gravy along with salt, pepper, and nutmeg.

  4. Strain the mixture.

Assemble and bake

  1. In a pudding dish, layer the terrapin, then bread crumbs, then sauce, repeating until the dish is filled, finishing with a layer of crumbs on top.

  2. Add enough sweet milk to moisten the top layer of crumbs.

  3. Dot with butter and bake at 400°F (200°C) for 20 minutes.

  4. Serve with slices of lemon.

What each ingredient does

Butter
Enriches the gravy and adds richness to the dish's flavor and top browning.
Flour
Thickens the hot water into a smooth gravy that binds the layers together.
Terrapin
Forms the main meat that gives the dish its body and savory flavor.
Bread crumbs
Provide structure between layers and absorb the sauce and milk as the dish bakes.

The step that matters

Stirring the flour and hot water. Adding hot liquid to flour without constant stirring forms lumps that won't smooth out. Stirring rapidly disperses the starch so the gravy stays smooth and evenly thickened.
