Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the eggplant

  1. Peel and slice the eggplant.

  2. Boil the sliced eggplant in slightly salted water until tender.

  3. Drain the boiled eggplant.

  4. Mash the drained eggplant.

Make the filling

  1. Soak the bread crumbs in milk.

  2. Add the soaked bread crumbs to the mashed eggplant along with salt, pepper, butter, and parsley.

  3. Mix the mixture well.

Bake

  1. Transfer the mixture to a buttered baking dish.

  2. Sprinkle additional bread crumbs on top.

  3. Bake at 400°F (200°C) until golden brown, about 1 hour.

What each ingredient does

Eggplant
Forms the soft, moist body of the dish once boiled and mashed.
Bread crumbs
Absorb milk and help bind the mashed eggplant, giving it body and a lightly set texture.
Milk
Softens the bread crumbs so they blend smoothly and add moisture to the filling.
Butter
Adds richness and fat, helping the top brown in the oven.

The step that matters

Bake until golden brown. Baking long enough lets moisture evaporate and the surface brown through the Maillard reaction, while the filling sets. Pulling it too early leaves a wet, loose centre.
