Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Scald the milk. Add the sugar and salt. Let the mixture cool.

  2. Add the dissolved yeast cake and lukewarm water. Mix in the fine granulated wheat with a broad knife or spoon.

  3. Cover the mixture. Let it rise for about 3 hours, or until it doubles in size.

  4. Cut the dough down.

Shape and bake

  1. Turn it into buttered pans.

  2. Let it rise again.

  3. Bake in a preheated oven at 350°F (175°C) for about 50 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fine granulated wheat
Forms the bulk of the dough and provides the structure of the loaf.
Yeast cake
Produces gas as it ferments, making the dough rise and become light.
Milk
Adds moisture and richness, softening the crumb and aiding browning.
Sugar
Feeds the yeast and adds sweetness and browning to the crust.

The step that matters

Let the dough rise until it doubles. Yeast gas expands the dough's gluten network to build volume. Rising too short leaves a dense loaf, while over-rising weakens the structure so it may collapse in the oven.
