Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and powdered sugar together until light and fluffy.

  3. Add the flour and baking powder, mixing well.

  4. Stir in the sweet milk and almond extract.

  5. Fold in the egg whites until just combined.

  6. Pour the batter into prepared cake pans and bake until golden.

Fill and ice

  1. For filling, mix grated coconut with sugar and spread between layers if desired.

  2. For icing, beat together powdered sugar, egg whites, and enough dissolved chocolate to achieve a rich color.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with the sugar to trap air and give the cake a tender, rich texture.
Flour
Forms the structure that holds the cake together as it bakes.
Baking powder
Releases gas in the batter, helping the cake rise and turn light.
Egg whites
Add structure and lift when folded in, helping the crumb set.
Sweet milk
Adds moisture and helps hydrate the flour into a smooth batter.
Powdered sugar
Sweetens the cake and helps aerate the butter when creamed.

The step that matters

Folding in the egg whites. Overmixing knocks out the air whipped into the egg whites, leaving a dense cake. Fold gently, just until no streaks remain, so the batter keeps its lift.

Swap the coconut

The recipe marks coconut as optional. How well each one fits the dish's main ingredients (butter, flour, sugar, milk, almond, egg, chocolate):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Coconutthe original
  4. Figfits about as well

Fit is the average pairing score against butter, flour, sugar, milk, almond, egg, chocolate. Candidates are from the same food group and used in at least 100 recipes.
