Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the eggplant

  1. Pare and slice the eggplant, then boil it in slightly salted water until tender.

  2. Drain and mash the eggplant, then mix in the soaked bread crumbs, salt, pepper, butter, and parsley.

Bake and serve

  1. Transfer the mixture to a buttered baking dish and sprinkle additional bread crumbs on top.

  2. Bake in a preheated oven at 400°F (200°C) until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Forms the soft, moist body of the dish once boiled and mashed.
Bread crumbs
Absorb moisture from the mashed eggplant and add body, with extra crumbs browning on top.
Milk
Softens the crumbs and adds moisture so the mixture stays tender.
Butter
Adds richness and fat, and helps the top brown in the oven.

The step that matters

Mashing the eggplant thoroughly after draining. Excess water left in the eggplant will thin the mixture and make it soggy, so draining well helps it hold together and bake up firm rather than wet.
