Why it works: Horseradish and mustard match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 1,832 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Pickles, Catsups, and Vinegar

Ingredients

Directions

  1. Use only pure cider vinegar for pickling.

  2. Heat the vinegar until it reaches the scalding point, then pour it over the pickles.

  3. Add a small amount of horseradish, mustard seed, or nasturtiums to prevent molding.

  4. If desired, dissolve a small lump of alum in the vinegar to keep cucumbers crisp.

  5. Ensure all vegetables and fruits used are sound and not overripe.
