Why it works: Turnip and leek match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 1,046 recipes. Both carry coumarin, which smells sweet, hay. The science ↓
Mutton Broth
Ingredients
Directions
Make the broth
Joint the bones of the mutton scrags and place them in a stewpan.
Add the onions, turnips, carrot, and fill the stewpan with water.
Bring to a boil, then reduce heat and let simmer for 3 hours, skimming regularly.
Prepare the vegetables
In another stewpan, cut the small carrot, turnips, onion, leek, and celery into small pieces.
Add the pearl barley to the vegetables.
Finish and serve
Strain the broth through a sieve into the vegetable stewpan, discarding the fat.
Boil gently until the barley is tender, then serve with the trimmed meat or separately with melted butter and parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Mutton scrags
- Bones and meat release flavour and body into the water during long simmering.
- Pearl barley
- Swells as it cooks, thickening the broth and giving it a soft, chewy texture.
- Leek
- Adds a mild, sweet onion-like aroma to the vegetable base.
The step that matters
Skimming the broth during simmering. Skimming removes foam and loose fat that rise to the surface, keeping the broth clear and preventing a greasy, cloudy result.
Swap the onion
How well each one fits the dish's main ingredients (mutton, turnip, carrot, leek, celery, barley):
- Parsnipfits better
- Lettucefits better
- Beetrootfits better
- Onionthe original
Fit is the average pairing score against mutton, turnip, carrot, leek, celery, barley. Candidates are from the same food group and used in at least 100 recipes.
