Why it works: Mushroom and butter are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 12,525 recipes. Both carry trans-2-decenal, which smells waxy, orange. The science ↓
Baked Mushrooms
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Preheat the oven to 350°F (175°C).
Peel the mushrooms, rinse them to remove grit, and cut off the ends of the stalks.
Place the mushrooms on a greased baking tin with the stalk side up.
Add a small piece of butter on each mushroom and sprinkle with pepper and salt.
Bake and serve
Cover with buttered paper and bake for 10 to 20 minutes until tender.
Serve on buttered toast with the gravy poured over them.

What each ingredient does
- Mushrooms
- Form the main body of the dish and soften into a tender, moist texture when baked.
- Butter
- Adds richness and moisture, coating the mushrooms as it melts during baking.
The step that matters
Baking until tender. Mushrooms are mostly water, and the 10 to 20 minute range is wide. Checking for tenderness rather than relying on time alone keeps them from drying out or staying firm inside.
