Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Rolled Beef

Oven, in the book's wordsA moderately hot oven

Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the beef

  1. Flatten the steak with a rolling pin and trim off the fat.

  2. Flour the meat and spread it with a forcemeat made from breadcrumbs, suet, herbs, parsley, onion, bacon, lemon peel, and seasonings.

  3. Moisten the mixture with beaten egg or milk to form a stiff paste.

  4. Roll up the meat tightly and tie it with kitchen twine at both ends and in the middle.

Bake and serve

  1. Place the rolled meat in a baking tin, pour melted dripping over it, and add unmelted dripping around it.

  2. Bake in a preheated oven at 350°F (175°C) until nicely browned, basting frequently.

  3. If browning too quickly, cover with greased paper.

  4. Once done, remove the twine and pour thickened brown sauce over the meat and around the dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Steak
Forms the outer wrapper that holds the stuffing and cooks into tender meat.
Breadcrumbs
Absorb moisture and bind with the egg or milk to form a stuffing that holds its shape.
Suet
Adds fat that keeps the stuffing moist and rich during baking.
Beaten egg or milk
Moistens the breadcrumb mixture so it sets into a stiff paste that binds the roll.
Dripping
Fat for basting and baking that promotes browning and keeps the meat moist.

The step that matters

Rolling and tying the meat. A tight, even roll with secure twine keeps the stuffing inside while the meat cooks. Loose rolling lets filling escape and cook unevenly.

Swap the onion
