Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and 14,037 recipes mention both. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Baked Eggs.

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Place the sliced hard-boiled eggs in a buttered dish.

Make the sauce

  1. In a saucepan, combine ham, cheese, butter, stewed tomatoes, white stock, lemon juice, nutmeg, parsley, pepper, and salt.

  2. Cook the mixture over low heat for 20 minutes, then strain it.

  3. Pour the strained sauce over the eggs.

Bake and serve

  1. Cover with a thick layer of bread crumbs and grated cheese.

  2. Bake in the preheated oven for 10-15 minutes until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hard-boiled eggs
Form the main body of the dish, set in place by the baked sauce.
Butter
Adds richness and fat, carrying flavour through the sauce.
White stock
Provides the liquid base that turns into the sauce as it cooks down.
Stewed tomatoes
Adds moisture and mild acidity to the sauce.
Cheese
Melts into the sauce and browns on top for savoury flavour and colour.
Bread crumbs
Form a crisp, golden topping during baking.

The step that matters

Straining the sauce. Straining removes solids so the sauce is smooth and pours evenly over the eggs; skipping it leaves a grainy, uneven coating.

Flavor stand-ins for the tomato

How well each one fits the dish's main ingredients (egg, ham, cheese, butter, lemon, nutmeg, parsley):

  2. Asparagusbetter flavor fit
  3. Spinachbetter flavor fit
  4. Tomatothe original

Fit is the average pairing score against egg, ham, cheese, butter, lemon, nutmeg, parsley. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
