Stuffed Loin of Lamb

Ingredients

Directions

  1. Remove the bones from the loin of lamb and wash the meat. Dry it well, then flour and salt it.

  2. Prepare the forcemeat by draining and chopping the mushrooms. Mix them with breadcrumbs, suet, bacon, mint, parsley, lemon, onion, celery salt, pepper, and nutmeg.

  3. Moisten the forcemeat with the egg and a little milk if needed.

  4. Spread the forcemeat evenly over the lamb, roll it up tightly, and tie it with narrow tape at both ends and in the middle.

  5. Roast the lamb, basting frequently, until thoroughly cooked. Glaze after cooling for better appearance.
