Why it works: Flour and butter are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 124,287 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Puff Paste
Ingredients
Directions
Wash and squeeze the butter in cold water, then dry it well in a floured cloth.
Shape the butter into a square about the size of a slice of sandwich bread and keep it cool.
Sift the flour onto a marble slab or board, make a hole in the center, and add the lemon juice.
Gradually add cold water until a smooth paste forms, adjusting for the butter's consistency.
Knead the paste until smooth, then roll it out into a strip wider than the butter and more than twice its length.
Place the butter on one half of the paste, fold the other half over, and press the edges together with a rolling pin.
Let it cool for about 15 minutes, then roll it out to about three times the original length while keeping the width the same.
Fold the paste exactly in three, turn it so the folded edges are on the right and left, and roll and fold again.
Set aside for another 15 minutes and repeat this process until the paste has been rolled out six times.
