Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Slice the cheese thinly and place it in a clean saucepan.

  2. Add the butter and porter (or ale or milk).

Make the sauce

  1. Season with black pepper and mustard to taste.

  2. Stir over medium heat until the mixture is thick and creamy.

Serve

  1. Pour the cheese mixture over hot buttered toast in a fireproof dish.

  2. Brown the surface in a 400°F (200°C) oven if desired, then serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cheese
Melts into the sauce and provides the main rich flavour and body.
Butter
Adds fat that makes the sauce smooth and rich.
Porter
Adds liquid and a malty flavour that thins the melted cheese.
Hot buttered toast
Provides a crisp base that holds the cheese sauce.

The step that matters

Stir over medium heat until thick and creamy. Cheese proteins toughen and separate if overheated, leaving a grainy or oily sauce. Gentle, moderate heat with steady stirring keeps the emulsion smooth and lets it thicken evenly.

Swap the mustard
